# How To Make It:
01 - Preheat the oven to 350°F. Lightly grease a 9-inch baking dish.
02 - In a large bowl, mix peaches, granulated sugar, cornstarch, grated ginger, lemon juice, and vanilla extract until the peaches are evenly coated. Transfer the mixture to the prepared baking dish, spreading evenly.
03 - In a separate bowl, whisk together flour, brown sugar, ground ginger, cinnamon, and salt. Add cold butter cubes and work them into the dry ingredients using a pastry cutter or fingertips until the mixture resembles soft, coarse crumbs.
04 - Evenly sprinkle the crumble topping over the peach filling. Bake for 35 minutes or until the topping is golden and the filling is bubbling around the edges.
