Soft coffee-infused jelly cubes served with sweetened cream for a refreshing Japanese-inspired dessert.

# What You'll Need:

→ Coffee Jelly

01 - 2 cups freshly brewed strong coffee (hot)
02 - 2 tablespoons granulated sugar
03 - 2 teaspoons powdered unflavored gelatin
04 - 2 tablespoons cold water

→ Sweet Cream

05 - 3/4 cup heavy cream
06 - 2 tablespoons granulated sugar, or to taste
07 - 1/2 teaspoon vanilla extract (optional)

# How To Make It:

01 - Sprinkle gelatin over cold water in a small bowl and let it bloom for 5 minutes.
02 - Combine hot brewed coffee and sugar in a medium bowl, stirring until sugar is fully dissolved.
03 - Gently heat bloomed gelatin in the microwave for about 15 seconds until dissolved. Stir gelatin into the sweetened coffee mixture until fully incorporated.
04 - Pour the mixture into a shallow dish or small square pan. Allow to cool to room temperature, then refrigerate for at least 2 hours until fully set.
05 - Once set, cut the coffee jelly into small cubes.
06 - Whisk heavy cream with sugar and vanilla extract (if using) until the sugar dissolves and the cream thickens slightly.
07 - Divide coffee jelly cubes into serving glasses or bowls and pour the sweet cream over the top. Serve chilled.

# Expert Insights:

01 -
  • Its coffee and dessert combined, which feels like cheating but tastes like genius
  • The texture is unexpected and delightful, wobbly and refreshing all at once
02 -
  • Pouring hot liquid directly into gelatin can create stubborn clumps that will never dissolve properly
  • The jelly needs at least two hours to set completely, or the cubes will slump into a sad puddle
03 -
  • Let the jelly come to room temperature before refrigerating to prevent condensation from making it weep
  • A sharp knife dipped in hot water cuts through the jelly cleanly without dragging
